In my time with The Watercress Company, I created a series of recipes that put watercress at the centre of the dish.
For a long time, people viewed watercress as a dressing or bit on the side. Together, we sought to flip that narrative and bring people's plates to life with this vibrant leafy green.
Over the space of a year, I tested, designed and styled a series of recipes that were accessible, eye-catching and most importantly: delicious.
Photographed by Lara Jane Thorpe, I styled the food to be as appealing as possible.
We saw great success with these recipes, and had several featured in national publications, including Hello! magazine.
