Blackberry Crème Fraîche Ice Cream

This is a real treat for the summertime – it's perfectly balanced between creaminess, sweetness with acidity from the fresh berries. I did lift the idea for this recipe from Delicious Magazine, which featured a strawberry version, but I prefer my fruit on the dark side.


 

 

Blackberry Crème Fraîche Ice Cream Maker Recipe


Ingredients

500g Blackberries

500g Crème Fraîche

200g Golden Caster Sugar


  1. In a blender or food processor blitz together the blackberries and sugar until they form a puree. You can leave some chunky bits if you like!

  2. Fold the fruit puree together with the crème fraîche in a bowl, before adding to your ice cream maker...

...now this is where fate is in your hands a little – follow the instructions for your own ice cream maker. I churned for about 45mins and probably could have done with longer.


3. Freeze!


My tips: make sure the bowl for your ice cream maker is well and truly frozen, and remains cold right up until you need it. When the churned mixture is in the freezer, take it out after hour 1 and hour 2 to whisk it to stop teeny tiny icicles forming. Trust me on that one!
