Chunky Mango & Avocado Salsa

This chunky, spicy, tangy salsa has never let me down.
It's the perfect accompaniment to go with grilled meat, fish or crispy potatoes. It combines a brilliant balance of sweet, spicy, salty, zingy flavours to create a party in your mouth!
More than that, it's super simple three-step recipe and can be ready in a flash. My top tip is to make this first, before you prep the meat it will be served with. That way, it can sit in the fridge and the flavour can develop.

CHUNKY, SPICY MANGO & AVOCADO SALSA RECIPE
Serves 2-4 as a side salad or accompaniment
Ingredients:
1 ripe mango, diced
1 ripe avocado, diced
2 spring onions, finely sliced
1 red chilli, finely diced (adjust amount to personal preference)
15-20g fresh coriander, roughly chopped
Zest and juice of one lime
Extra virgin olive oil
Salt & pepper
Method:
In a bowl, combine all the fresh ingredients together, including the zest and juice of the lime.
Add a small drizzle of the olive oil and toss together. It’s important not to be too vigorous, as the avocado and mango will be easily broken up and turn into a paste, rather than a chunky salsa.
Season to taste with salt and pepper. Let it sit in the fridge while you prepare your other food.
