My Easter Food Feasting Table

I'm an eldest daughter (and granddaughter) – that should tell you nearly everything you need to know about me. It should also mean you won't be surprised that I offered to single-handedly* cater an Easter party for 16 guests.

The Easter Menu

Here's everything I made for a giant feasting table for 17 people:


Main Dishes:
  • Slow Roasted Lamb Kleftiko with Potatoes and Onions

  • Slow Roasted Cuban Mojo Pork Shoulder

  • Chargrilled Old Bay Spatchcock Chicken

  • Chargrilled Halloumi & Vegetable Skewers


Side Dishes:
  • Leek & Gruyere Tart with Homemade Shortcrust Pastry

  • Herby Buttery New Potatoes

  • Harissa Roasted Carrots & Crunchy Chickpeas with Whipped Feta

  • Fresh & Crunchy Shirazi Salad

  • Roasted Shallot & Chicory Salad with Rocket, Herbs, Parmesan & Pumpkin Seeds

  • Charred Hispi Cabbage with Chilli Oil & Parmesan

  • Basil & Olive Oil Dressed Tomatoes

  • Chimichurri & Pesto


Desserts:
  • Homemade Pavlova with Lemon Whipped Cream, Red Berries & Edible Flowers

  • Salted Dark Chocolate Torte with Homemade Shortcrust Pastry

  • Thyme & Honey Roasted Peaches with Mascarpone

Since starting an online cooking course with Leiths, my skills and confidence have grown massively. I surprised even myself with how organised, calm and prepared I was for pulling this Easter feasting table off!


How Do You Prepare A Large Family Dinner?

I organised and prepared food over the two days leading up to Easter Sunday and finished the cook on the Sunday morning. My Good Friday was spent making pastry, my Saturday consisted of marinating lots of meat, blanching vegetables and making various side dishes.
