BBQ Pork Belly Bites Recipe

The perfect pork belly recipe for BBQ season. Think burnt ends.
I don't like to over-complicate things on the grill. Some people are amazing at smoking and cooking and grilling - it's just not my bag. I'm much happier stood over a hob!
That being said, this recipe is equally great on a BBQ grill or in a pan on the hob. The marinade is sticky and sweet with a punch from the mustard and, combined with the caramelisation of fat in the meat, creates a succulent flavour bomb.
Let's make some pork belly bites on the barbecue!

Pork Belly Recipe For BBQ or Pan
Ingredients:
700g Pork belly
2tbsp Dijon mustard
2tbsp Maple syrup
1tbsp Olive oil
Salt, pepper
Method:
Using a very sharp knife, cut the pork belly into long, even slices. Then, cut those strips into smaller slices. Be careful not to go too small, remembering that it will shrink when it’s cooked – about 1 inch is perfect.
In a bowl, mix the mustard, syrup and oil. Then, tip in your sliced meat and massage the mix in gently with your hands. Cover and leave them to rest for at least a couple of hours in the fridge – even better if you can leave them overnight.
When you’re ready to cook, remove from the fridge about 20 minutes beforehand.
If you’re cooking in a pan: bring it up to a medium heat and add a tiny drizzle of oil, just to coat the base and help prevent sticking. Use tongs to add the slices, one at a time. Leave them untouched for a few minutes, allowing them to caramelise. Once that side is cooked, turn them over to the opposite side. Repeat this process until they are cooked on all sides – they may need a few extra minutes on the thick, fatty top to allow it to render down.
If you’re cooking on the BBQ: repeat the same steps as the pan but do this directly on a hot grill. Make sure to spray it with a little oil first to prevent the meat from sticking. Keep turning until all sides are cooked.
Sprinkle with a little black pepper to serve – you can also make extra of the marinade sauce to drizzle on top.
